WHere is a home-style version of a drink from the seasonal cocktail list. Designed as a large-volume pre-mixed that's packed full of flavours associated with Christmas time, making it excellent for a celebration. Any leftover cordial you can use for brunch beverages, desserts, or for another batch of bikinis.
The Bikini Cocktail
Yields 10 people
For the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
Ingredients for the Drink (makes 850ml, to serve 10)
400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch
Directions
To prepare the Cordial: Put the listed ingredients in a saucepan, heat until it reaches a light boil, stirring to dissolve. After that, turn off the heat and leave to reach room temperature fully. Transfer into a sterilised bottle, seal and refrigerate it in the fridge, it can be stored for about a month.
To make Premix: Pour every liquids into one large bottle, let it rest for one hour, then strain , ideally through cheesecloth, so it's perfectly clear.
For serving: Measure 85ml of the cocktail base into your cocktail shaker filled with ice, and agitate carefully for one minute to cool it down. Filter into a frosted cocktail glass or equivalent, top with the cranberries and finish by giving it a brief mist with the mandarin essence over the drink.
